    Greens: Spinach Parmesan Soup

    List of Ingredients

    1 bunch fresh spinach
    2 tablespoons butter
    1 green onion, chopped
    2 cups half and half or mil
    2 tablespoons flour
    1/4 teaspoon dried thyme
    1/2 teaspoon celery salt or salt
    1/8 teaspoon nutmeg
    1 cup chicken broth
    1/4 cup parmesan cheese
    croutons

    Recipe

    Wash and stem fresh spinach. Chop coarsely. In a large saucepan, melt the butter. Stir in the spinach and green onion. Saute for 3 or 4 minutes or until tender. Spoon into blender container; whirl until smooth. Mix half and half or milk with flour, thyme, celery, salt and nutmeg. Combine with chicken broth and spinach in saucepan. Cook over medium heat until thickened. Stir in Parmesan cheese. Serve hot with a sprinkling of croutons over each portion.
