    1 carcass, drippings, skin, bones and meat
    leftover from turkey
    6 chicken wings, necks or backs
    6 quarts water
    1 teaspoon dried thyme
    1 small onion
    3 whole cloves
    1 small bay leaves
    2 teaa salt substitute
    8 peppercorns
    1 large carrot, cut in thick rounds
    1 large stal celery and leaves, cut up
    3 tablespoons barley
    salt and pepper
    1 tablespoon parsley, minced

    Recipe



    Place all ingredients except the barley, the last bit of salt and pepper, and the parsley in a slow-cooker, and set at 250ºF. Cook covered, 3 to 6 hours. Add the barley and cook 45 minutes. Strain. Place broth in the freezer to encourage fat to rise to top. Pick over solids, discarding bones, skin, peppercorns, cloves and bay. Reserve meat, vegetables and barley. Skim fat from broth, return reserved ingredients, and reheat. Add salt and pepper to taste.
