    Quesadilla: Buny's Leftover Meatloaf Quesadilla

    ok, so it's a good excuse to use cheese... We had meatloaf last nite and making "just another sandwich" just didn't sound as good. The end result worked well!!

    List of Ingredients

    shredded or sliced cheese - your favorite (i used combination of cheddar and provolone)
    2 flour tortillas
    favorite bbq sauce (amount is to taste) - optional
    leftover meatloaf -- slice as thin as you can (1/8-1/4 inch thick) - enough to cover a tortilla

    optional: thin sliced green onions

    Recipe

    Have your cheese and thin sliced meatloaf ready to go before you heat up the pan.

    Over medium high heat, melt some butter. Throw your first tortilla into the skillet, and spread a thin layer of meatloaf over the tortilla (fill the surface). Sprinkle on some bbq sauce, and then throw as much cheese as you like on top. Top with the last tortilla. Fry the first side until the bottom tortilla is browned and crisp. Carefully flip the tortillas and cook second side until it is browned and cheese is melty. Carefully slide onto a plate and cut into wedges.

    Think it may be good with a bit of ranch dressing or sour cream for dipping as well;
