    Chicken and Asparagus Hollandaise

    1 pound boneless skinless chicken, cut into strips
    1 envelope hollandaise sauce
    2 teaspoons lemon juice
    1 pound asparagus
    hot cooked egg noodles

    Recipe



    Blanch asparagus (cook in simmering heavily salted water until crisp tender, and then drop into bowl full of water and lots of ice to stop cooking process). In skillet coated with nonstick cooking spray, brown chicken over medium-high for 10-12 minutes, stirring occasionally. Meanwhile, prepare hollandaise sauce according to package. Add hollandaise sauce, lemon juice and asparagus to chicken. Cover and cook stirring occasionally, 5-10 minutes or until chicken is done. Do not overcook. Add cayenne pepper and season with salt and pepper. Serve over noodles. Yield: 4 servings.
