    3 cans chicken -- drained and flaked
    1 can chopped green chiles -- drained
    1 cup shredded Monterey jack cheese
    1/2 cup chopped green onions
    2 tablespoons chopped parsley
    8 flour tortilla

    Recipe



    Combine chicken, chiles, cheese, onion and parsley, and set aside. Wrap tortillas in damp paper towels and microwave on high 15 seconds. Brush both sides of tortillas, one at time, with veg oil, keeping remaining tortillas warm. Place 1/2 c. chicken mix in center of tortilla. Fold in from left and right sides to partially enclose filling. Fold up bottom edge of tortilla and fold into rectangle, completely enclosing filling. Secure with toothpick. Repeat with remaining tortillas and chicken mixture. Place tortillas on a lightly greased baking sheet. Bake at 425ºF for 10 minutes or until nicely browned. Serve with shredded lettuce, salsa, tomato and sour cream. Serves 4.
