    Stroganoff: Zesty Beef Stroganoff (for 2)

    List of Ingredients

    2 cooked beef tenderloin steaks
    1 teaspoon vegetable oil
    1 medium onion, cut into small strips
    1/2 cup au jus natural-style gravy
    2 tablespoons prepared horseradish
    1 tablespoon tomato paste
    4 ounces fresh mushrooms -- sliced
    1/4 cup fat-free sour cream
    2 cups hot cooked rice or noodles

    Recipe

    Cut tenderloin steaks into 1/4-inch slices. In small bowl, mix gravy and horseradish. Heat oil in a 10-inch nonstick skillet over medium-high heat. Saute onion in oil. Stir in beef, gravy, tomato paste and mushrooms; reduce heat to medium-low. Cover and cook 6 to 8 minutes, until hot. Just before serving, stir in sour cream. Serve over rice and sprinkle with parsley. Makes 2 servings.
