    Mayonnaise: 5 Flavored Mayonnaises

    SESAME MAYONNAISE
    1 cup mayonnaise
    2 tbl Asian sesame oil
    1 tsp hot sesame oil
    1 tsp tamari - (to 2) (or regular soy sauce)
    1/4 tsp Chinese hot chile paste
    2 tbl chopped fresh chives

    CHIPOTLE MAYONNAISE
    1 cup mayonnaise
    1 chipotle chile in adobo sauce finely chopped
    1 clove garlic minced
    2 tbl chopped cilantro
    adobo sauce (optional)

    GREEN CURRY MAYONNAISE
    1 cup mayonnaise
    2 tsp Thai green curry paste - (to 3)
    1 tbl fresh lime juice
    1/8 tsp Thai fish sauce
    1 tbl chopped fresh cilantro or chives

    NICOISE MAYONNAISE
    1 cup mayonnaise
    2 tsp anchovy paste
    3 tbl finely-chopped Nicoise olives
    2 tbl drained chopped capers
    1 lrg garlic clove minced
    2 tbl chopped fresh basil - (to 3)

    CHUTNEY MAYONNAISE
    1 cup mayonnaise
    1/2 cup Major Grey chutney
    1 tbl fresh lime juice
    1 green onion top finely chopped

    Recipe

    O Sesame Mayonnaise: To the mayonnaise, add Asian sesame oil, hot sesame oil, tamari or regular soy sauce, Chinese hot chile paste and chopped fresh chives. (Great as a sauce for asparagus.)

    o Chipotle Mayonnaise: To the mayonnaise, add chipotle chile, minced garlic and chopped cilantro. Add adobo sauce if you want it hotter. (Serve with roast beef or grilled salmon or tuna.)

    o Green Curry Mayonnaise: To the mayonnaise, add Thai green curry paste, fresh lime juice, Thai fish sauce and chopped fresh cilantro or chives. (Try it as a dip for shrimp or as a dressing for coleslaw.)

    o Nicoise Mayonnaise: To the mayonnaise, add anchovy paste, Nicoise olives, capers, garlic and chopped fresh basil. (Use it in tuna salad, dolloped onto a veal chop or scallop, or as a dip for roasted potato wedges.)

    o Chutney Mayonnaise: To the mayonnaise, add Major Grey chutney (chop any large chunks of fruit), fresh lime juice and green onion. (Spread it on a turkey sandwich, add it to pasta salad or mix it with an equal part grated sharp Cheddar and bake it on baguette rounds.)
