Mayonnaise: Avocado Mayonnaise

List of Ingredients

1/4 cup diced onion
1/2 cup mashed avocado
1 1/2 cups mayonnaise
2 teaspoons Dijon mustard
1 teaspoon lemon juice
1 teaspoon balsamic or red wine vinegar
1 teaspoon salt
pepper to taste
3 tablespoons fresh grapefruit juice


Recipe

With food processor or blender, process onion and avocado until pureed. Add mayonnaise, mustard, lemon juice, vinegar, salt and pepper. Process for 15 seconds, until thick. Add grapefruit juice and process to mix. Taste and adjust seasonings
