    Jam: Harvest Time Pumpkin Jam

    List of Ingredients

    30 ounces pumpkin pie mix
    1/2 cup lemon juice
    2 teaspoons ground ginger
    2 ounces dry fruit pectin
    4 1/2 cups sugar
    1 teaspoon pumpkin pie spice

    Recipe

    In a large sauce pan, combine pie mix, pumpkin pie spice, lemon juice, ginger and pectin. Heat to boiling, stirring constantly. Add sugar. Heat to full rolling boil stirring constantly. Continue boiling for one minute, stirring frequently. Skim off foam, ladle into hot jars. Seal. Process for 15 minutes in a hot water bath at 180 to 190ºF. The recipe yields 6 (8 oz) jars.
