    1/2 pound blanched almonds
    2/3 cup sugar
    2 tablespoons water
    1 tablespoon fresh lemon juice
    1 dash salt

    Recipe



    Food process almonds til smooth and paste-like. Combine remaining ingredients in small saucepan. Heat slowly, stirring constantly, til syrup comes to full boil in center of pan. Remove from heat. With food processor on, gradually drizzle in hot syrup; whirl til forms a ball. Form into a roll and wrap tightly with aluminum foil, twisting ends to seal. Let ripen in fridge for 1 week. Makes 3/4 pound.
