Muffin: Date & Nut Muffin Mix

List of Ingredients

2 cups self rising flour
1/2 cup sugar
1/4 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup chopped pecans


Recipe

In medium bowl, combine all the ingredients,and blend with a wire whisk. Place the mix into an airtight container. Give muffin mix in muffin basket with package of dates and freshly ground vanilla nut coffee.

Date and Nut Muffins (makes 1 dozen): 1 package date and nut muffin mix, 1 egg, 3/4 c. milk, 2/3 c chopped dates, 1/4 c. oil. Preheat oven to 400ºF. In a large mixing bowl, combine muffin mix with the egg, milk, dates and oil Stir the mixture until just blended. Do not overmix. Spoon the batter into greased muffin tins, filling 3/4 full. Bake for 15-18 minutes, or until golden brown.
