    Bread: Focaccia Mix

    List of Ingredients

    1 package active dry yeast
    1 tablespoon sugar
    1 1/2 teaspoons crushed red pepper flakes
    1 1/2 teaspoons dried rosemary
    1 1/2 cups bread flour
    1/2 teaspoon salt

    Recipe

    Combine all with wire whisk. Store in airtight container

    Focaccia (serves 6): 1 pkg mix, 1/2 c. warm water, 4 tbl. olive oil, salt and pesto. Place mix into large glass bowl. Add the warm water and 2 tbl. of olive oil. Blend dough with dough hook or wooden spoon until its smooth. If it is dry, add water by tablespoon. If it sticks, add a bit of flour. Turn the bread onto a floured board, and knead until it's smooth. Transfer to an oiled bowl, and rotate the dough to coat surface with oil. Cover with plastic wrap and let rise in warm spot till doubled, about 1 hour.

    Preheat the oven to 425ºF. Punch dough down onto floured board. Roll dough into a 13x9 rectangle. Place in an oiled 13x9 pan and brush with remaining olive oil. Sprinkle surface with salt. Bake for 5 minutes. Use a fork to pierce air bubbles on the surface, and continue to bake until golden brown, about 8 minutes more. Remove from the pan and cut into 3" squares. Serve warm with pesto.
