    Cake: Gingerbread Cake Mix

    List of Ingredients

    2 1/2 cups flour
    1/2 teaspoon baking powder
    1 teaspoon baking soda
    2 teaspoons ground ginger
    1 teaspoon ground cinnamon

    Recipe

    Combine all and store in airtight container. Pack into cellophane bag and give in 9" round ceramic baking dish or in basket with jar of unsulfured molasses, a serrated knife and a pound of vanilla-nut coffee.

    Gingerbread Cake (makes one 9" cake): 1 package gingerbread cake mix, 1/2 c. butter softened, 1 egg, 1/2 c. sour cream, 1/2 c. unsulfured molasses, 1 c. boiling water, 1 c. whipping cream. Preheat the oven to 350ºF. Grease a 9" round baking dish. Pour the gingerbread cake mix in a large bowl. Make a hole in the middle and add the butter, egg, sour cream and molasses. Beat on low speed of an electric mixer, or by hand, until batter comes together. Gradually add the boiling water. Pour the batter into prepared pan and bake for 35 minutes. Cool and cut into squares. Serve warm with whipped cream.
