    Yogurt Dressing with Lemon and Tahini

    2 small clove garlic
    1 pinch salt
    1 cup nonfat yogurt
    1 tablespoon tahini
    lemon juice to taste
    freshly ground black pepper

    Recipe



    Mince the garlic very finely with the he salt. Stir into the yogurt. If the tahini is very pasty and thick, gradually loosen it by working the yogurt into it by spoonfuls until it is diluted. If it is thin and runny, simply stir it into the yogurt. Season to taste with a squeeze of fresh lemon and freshly ground pepper. Let stand at least 15 minutes for flavors to merge. Makes 1 cup.
