    Chicken: Tropical Chicken Sandwiches

    1 skinless chicken breast
    1/2 stick celery finely chopped
    1/2 cup crushed canned pineapple
    1/2 tablespoon low fat mayonnaise

    If your kids like mayonnaise then try this light and healthy sandwich filling. You can keep it in a sealed container in the fridge for 2 days. Send the sandwiches to school in an insulated container with a cold pack. If you can' t get canned crushed pineapple then just throw a can of sliced pineapple (drain it first) in the food processor. If you have left over chicken from a roast then use that instead of the chicken breast. Add sliced almonds or dried fruit if you like.

    Cook the chicken breast by poaching in water in a covered frying pan (about 5 minutes). Alternatively, cook it on the grill or roast in the oven. Pour the pineapple into a fine sieve and press down on it to extract as much juice as possible. This will stop the sandwiches from becoming soggy. Chop the chicken and mix with the other ingredients. Spread on bread or roll the filling inside a tortilla or pita bread.
