    Veggie: Goat Cheese & Cucumber Sandwiches

    List of Ingredients

    3 ounces soft goat cheese (chevre)
    1 tablespoon chopped fresh mint
    1 tablespoon chopped fresh parsley
    1 tablespoon chopped fresh chives
    1/4 teaspoon salt
    4 slices cracked wheat bread
    1/2 medium cucumber, sliced

    Recipe

    In small bowl, combine goat cheese with seasonings and herbs, blending well. Spread mixture on 2 slices of the bread. Top with cucumbers and remaining slices of bread. Makes 2 sandwiches.
