    Beef: Roast Beef & Peppercorn Pitas

    List of Ingredients

    3 cups purchased shredded cabbage with carrot
    (coleslaw mix)
    1/4 cup fat-free peppercorn ranch salad dressing
    3 tablespoons finely chopped onion
    8 ounces thinly sliced cooked roast beef
    4 pita bread rounds -- halved crosswise
    1/2 a medium cucumber -- thinly sliced

    Recipe

    Combine shredded cabbage with carrot, salad dressing, and onion in a medium bowl. Divide beef among pita halves. Add some of the cucumber slices and coleslaw mixture to each pita half. Serve immediately. Makes 4 servings.
