    Veggie: Peppery Artichoke Pitas

    List of Ingredients




    1 (15-ounce) can Great Northern or navy beans, rinsed and drained
    1 (14-ounce) can artichoke hearts, drained and coarsely chopped
    1/2 cup torn arugula or spinach leaves
    1/4 cup bottled creamy garlic salad dressing (soy mayonnaise or olive oil & vinegar also work)
    1/4 tsp fresh ground black pepper
    3 large pita bread rounds, halved crosswise

    Recipe



    In a medium bowl, combine the beans, artichoke hearts, arugula, salad dressing and pepper. Toss well to combine.

    To serve, stuff each pita half with bean mixture.

    Makes 6 sandwiches.
