    Apricot Rosemary Salsa

    1/2 cup apricot chopped
    1/4 cup avocado chopped
    1/4 cup tomato chopped
    1/2 teaspoon lemon peel
    2 tablespoons lemon juice
    1 tablespoon green onion thinly sliced
    1/2 teaspoon dried rosemary crushed

    Recipe

    In a bowl stir together apricots, avocado, tomato, lemon peel, lemon juice, green onion, and rosemary. Cover and chill in the refrigerator for up to 24 hours. Makes about 1 cup.
