    Sweet Onion & Fennel Salsa

    List of Ingredients

    1 cup chopped Texas sweet onion
    1 cup chopped fennel
    --white and green parts
    --plus some leaves
    1/2 cup chopped ripe tomatoes
    1/4 cup chopped red or yellow bell pepper
    1 tablespoon minced jalapeno pepper
    --or serrano pepper
    --plus more to taste
    1/4 cup chopped fresh cilantro
    1/4 cup olive oil
    salt -- to taste
    black pepper -- to taste

    Recipe

    In medium bowl, combine onion, fennel, tomatoes, bell pepper, jalapeno pepper, cilantro, oil, salt and pepper. Let stand at room temperature 30 minutes to let flavors blend. Makes 10 servings.
