    Candied: Candied Yams

    List of Ingredients

    1/3 cup apple juice
    3 tablespoons brown sugar
    3 tablespoons maple syrup
    2 tablespoons molasses
    1/8 teaspoon cinnamon
    1/8 teaspoon allspice
    3 pounds yams -- peeled,cut 1/2 slice

    Recipe

    In rimmed 10x15 baking pan, combine apple juice, brown sugar, syrup, molasses, cinnamon and allspice. Turn yams in mix to coat, then arrange in single layer, overlapping slightly. Cover tightly and bake in a 375ºF oven for 20 minutes. Turn yams over and then continue to bake, covered, until very tender when pierced, about 25 minutes longer. Uncover yams and bake another 15 minutes. Turn yams over ans bake until only a think layer of syrup remains in bottom of pan, about 5 minutes longer. Arrange on serving dish, scrape syrup from pan and drizzle over yams. Season to taste with salt and pepper.
