    Golden Parmesan Potatoes

    2 pounds new potatoes, scrubbed and quartered
    1 cup grated Parmesan cheese
    1/3 cup olive oil
    2 cloves garlic, crushed
    1 1/2 teaspoons Italian seasoning

    Recipe



    Heat oven to 400°F. Toss potatoes with Parmesan cheese, olive oil, garlic and Italian seasoning in a large mixing bowl; mix lightly to coat potatoes.

    Line a jelly roll pan or cookie sheet with aluminum foil. Place potatoes on pan; bake 45 minutes or until a toothpick comes out easily when inserted in centers of potatoes. Serve immediately.

    original poster's note: I thought that the recipe sounded a little bland for my bunch so I added a couple dashes of garlic salt and red pepper flakes. Next time I will add a little more than that because I think that they were essential. Also, I cut the potatoes into thin wedges and stood them up with the skin down. This helped them not to stick to bad. I had to cut the cooking time down to 30 to 35 minutes as well.
