    Grated Sweet Potatoes w/ Honey & Orange

    4 1/2 pounds sweet potatoes
    3 tablespoons unsalted butter
    3/4 cup fresh orange juice
    3/4 cup half and half or evaporated milk
    4 1/2 tablespoons light brown sugar
    1 1/2 teaspoons ground coriander
    3/4 teaspoon ground ginger
    2 1/4 teaspoons grated orange peel
    3/4 teaspoon salt
    3 tablespoons honey
    1 1" wide long strip orange peel

    Preheat oven to 375ºF. Peel sweet potatoes and coarsely grate (can do in food processor with medium grating blade). Set aside. Butter a large corningware casserole dish. Combine 3 tbl. butter, orange juice, half and half, brown sugar, coriander, ginger, orange zest and 3/4 tsp salt in a large heavy skillet over medium high heat. Bring to a boil, stirring constantly to blend. Remove from heat and add sweet potatoes. Mix well with a spoon. Taste and if needed, add more salt. Spread sweet potato mixture in baking dish. Cover with foil.

    Bake for 25 minutes; remove foil and stir potatoes well. Bake, uncovered, for 25 minutes more. (Sweet potatoes can be made 1 day ahead to this point; cool, cover and refrigerate. When ready to continue, reheat in a preheated 375 ºF oven until hot, about 15 minutes.) Drizzle with honey and bake, uncovered, for 10 minutes more. Remove from oven and serve warm. Place orange peel in center and garnish with parsley. Serves 10.
