    Mashed: Herb Garlic Mashed Potatoes

    List of Ingredients

    2 heads garlic (cut in half crosswise thru bulbs)
    1 tablespoon oil
    3 1/2 pounds russet potatoes
    2 packages garlic and herb cheese
    1/2 cup lowfat 1% milk
    1/3 cup chives -- minced

    Recipe

    Brush cut sides of garlic with oil. Roast garlic in garlic cooker. Cool, then squeeze cloves from the 3 of the heads; leave the other half head whole. Set garlic aside. Peel potatoes, cut into chunks. Place on rack set over 1" water in 5-6 quart pan. Cover pan and bring water to boil over high heat. Boil gently until potatoes mash easily, about 30 minutes. Drain and remove from rack. Add loose garlic cloves and cheese to potatoes in pan. Mash with masher. Add as much milk as needed to make smooth and creamy. Stir in minced chives. Serve with remaining garlic.
