Roasted: Lemon Roasted Potatoes

2 tablespoons butter, melted
2 teaspoons lemon peel grated
1/8 teaspoon pepper
2 tablespoons chopped parsley
1 tablespoon lemon juice
3 pounds new potatoes, cut into fourths


Recipe

Heat oven to 325ºF. Grease rectangular pan. Mix all ingredients in bowl; add potatoes and toss to coat. Place potatoes in pan. Roast uncovered about 1 hour and 10 minutes, turning occasionally until potatoes are tender when pierced with a fork.
