    Mashed: Light Mashed Potatoes

    List of Ingredients

    4 medium potatoes, peel and dice
    1 tablespoon light margarine
    1/4 c skim milk or chicken broth -- (1/4 to 1/2)
    2 tablespoons grated Parmesan cheese
    garlic powder, onion powder, salt, pepper

    Recipe

    Cook potatoes until tender and drain thoroughly. Place back on heat and add liquid and margarine. Mash the potatoes thoroughly adding more liquid as needed to make a smooth consistency. Add seasonings and cheese and mix. Serve hot. Serving Suggestions: If you really want to rid yourself of the margarine you can still get that buttery taste if just before serving you spray them with a no-fat butter spray. you can also add fresh green onion or scallion, herbs or veggies to liven them up too.
