    Mashed: Bacon Rosemary Mashed Potatoes

    List of Ingredients




    ½ to 1 cup chopped raw bacon
    2 pounds peeled & diced potatoes
    1 tbsp. chopped fresh rosemary OR 2 tsp. dried rosemary
    1½ tsp. salt
    1 tsp. pepper
    1½ cups water
    ¼ to ½ cups light cream
    3 chopped green onions
    2 tbsp. butter

    Recipe



    Cook bacon in a large skillet over medium heat, stirring frequently, until crisp. Remove from skillet and drain on paper towels. Pour off all but 1 tbsp. drippings, add potatoes & stir-fry for a minute or two. Add rosemary, salt, pepper and water. Heat to boiling; reduce heat and simmer until potatoes are tender & water mostly evaporated. Mash potatoes, adding cream until of desired consistency; stir in cooked bacon, green onion & butter. Correct the seasonings.
