    Roasted: Rosemary Roasted Potatoes

    List of Ingredients

    4 baking potatoes, cut into wedges
    1/4 cup fresh rosemary (2 tbl. dried)
    garlic powder, onion powder, pepper -- to taste
    1 spray olive oil
    salt to taste

    Recipe

    Preheat the oven to 400ºF. Wash and peel (if desired) and mix well with the seasonings. Spray a cookie sheet with oil and spread seasoned potatoes in one even layer. Lightly spray top of potatoes. Cook for 20 to 30 minutes, stirring and turning every 10 minutes, until golden brown. Serving Suggestions: This side dish goes well with almost any main course but especially in place of french fries. It also makes an excellent potato salad with the addition of a little vinaigrette or low-fat/no-fat mayonnaise.
