    Scalloped: Scalloped Potatoes with Cheddar Cheese

    List of Ingredients

    1 can cream of chicken soup, condensed
    3/4 cup skim milk
    4 medium potatoes -- sliced 1/8" thick
    1 cup cheddar cheese, lowfat -- shredded
    1 small onion -- chopped
    1/8 teaspoon salt
    1/8 teaspoon pepper

    Recipe

    Empty soup into 2-quart casserole. Stir in milk gradually. Stir in remaining ingredients. Cover tightly and microwave on high 20 to 35 minutes, stirring every 10 minutes, until potatoes are tender. Let stand covered 5 minutes. Serves 6.
