    Risotto: Champagne Risotto

    List of Ingredients

    2 tablespoons unsalted butter
    1 cup chopped shallots
    10 ounces fresh wild mushrooms, sliced
    2 cups Arborio short grain rice
    1 teaspoon dried thyme
    1/2 teaspoon salt
    1 cup warm water
    3 cups inexpensive champagne
    1 cup chopped fresh flat leaf parsley
    1 cup grated parmesan cheese

    Recipe

    In a large pot over medium heat, melt the butter. Add the shallots and mushrooms, and saute for 5 minutes until softened. Add the rice, thyme and salt, and stir for 1-2 minutes. Then keep adding small dollops of water and champagne, stirring until each addition is absorbed and the rice is cooked. The whole process will take 20-30 minutes. As soon as the rice is right consistency, stir in the parsley and cheese, and serve immediately. Serves 6-8.
