    Quesadillos with Chiles & Cheese

    List of Ingredients




    8 flour tortillas (8")
    1 can diced green chiles
    1 cup finely chopped green onions
    4 ounces grated jack cheese (1 cup)
    4 ounces grated cheddar cheese
    1 tomato, finely diced
    3 tablespoons minced cilantro
    1/2 teaspoon ground cumin
    salt and pepper to taste

    Recipe



    In a bowl, toss all but tortillas until nicely mixed. Brush an 8 or 9 inch skillet with oil. Place one tortilla in pan and sprinkle top evenly with 1/4 of the filling. Top filling with a second tortilla. Cook for several minutes, pressing top down with spatula, until bottom is lightly browned. By pressing top down, the melted cheese will help keep the tortillas together when turning. With the spatula, turn the tortilla and brown the other side. Transfer to a baking pan and keep warm in a 250ºF oven. Continue with remaining tortillas. With a sharp knife or kitchen shears, cut the quesadillo into 6 wedges. Place on plate with guacamole, sour cream and salsa to use as dip. Serves 2-4.
