    Main Dish: Easy Eggplant Parmesan

    2 medium eggplant, cut into 1/4" slices
    3 tablespoons light biscuit mix, thinned w/ 1/8c water till soupy
    1 cup seasoned bread crumbs
    2/3 cup tomato sauce
    1 cup mozzarella cheese, shredded

    Recipe



    Preheat oven to 375¼F. Dip eggplant slices in batter and coat well with bread crumbs. Spray a no-stick cookie sheet with spray oil. Arrange slices in a single layer. Bake for approximately 15 minutes or until golden brown and turn over. Continue cooking another 6-8 minutes until browned on other side. Remove from oven and arrange into 4 layered portions. Top with tomato sauce and cheese and place under the broiler for about a minute or until cheese is melted.

    Serving Suggestions: I either serve this in some good Italian bread as a sandwich or with spaghetti. A nice green salad or an artichoke rounds out the meal.
