    Veggies/Sides: Spinach Squares

    List of Ingredients

    1 tb butter
    2 large eggs beaten
    1 garlic clove minced
    2 tsp lemon juice
    5 green onions chopped
    1/4 c Parmesan cheese
    6 sprigs parsley chopped
    1/4 cup bread crumbs
    1 Tb mint
    1 package frozen spinach (10 oz)
    5 oz soft tofu
    salt and pepper
    1/2 Tb soy sauce
    sesame seeds

    Recipe

    Preheat the oven to 375 degrees F. Cook the frozen spinach and squeeze it dry.
    Sauté the garlic, green onions and parsley until softened. Stir in the mint.
    Combine the tofu and eggs in a blender or mixing bowl. Add the soy sauce and lemon juice and beat until smooth. Stir in the Parmesan cheese, bread crumbs and the spinach, green onion mixture and season with salt and pepper.
    Spoon into a baking dish and garnish with sesame seeds. Bake for 30 minutes, cool and cut into squares.
