    Griddle: Vegan Multigrain Waffles

    1/3 cup orange juice
    1 1/3 cups soymilk
    1/2 cup whole wheat pastry flour
    1/2 cup rye flour
    1/2 cup barley flour
    1/2 cup oat bran
    1 teaspoon baking soda
    1 teaspoon baking powder
    1/2 teaspoon fine ground sea salt
    1/8 teaspoon cinnamon
    1/2 cup blended soft silken tofu
    2 tablespoons canola oil
    1 tablespoon maple syrup

    Combine orange juice and soymilk, then set aside to curdle. Mix the flours, oats or oat bran, baking soda, baking powder, sea salt and cinnamon in a medium sized bowl. Add the tofu, oil and maple syrup to the liquid mixture. Combine thoroughly with a whisk. Pour the liquid mixture into the dry, stirring gently to combine. Set the mixture aside for about 10 minutes. Grease the waffle iron Wipe excess oil with a clean towel. Heat waffle iron, and make waffles according to directions. Serve with fresh or dried fruit, applesauce, pure maple syrup, or whatever else you choose. Freeze extra waffles for later.
