    Coconut: Chocolate Coconut Bars

    List of Ingredients

    CRUST:
    1 ounce unsweetened chocolate
    1 cup flour
    1/2 cup powdered sugar
    1/2 tablespoon kosher salt
    1/2 cup unsalted butter, cold, cut in pieces

    FILLING:
    1 can sweetened condensed milk
    1 cup shredded coconut meat
    1/2 cup chopped toasted walnuts or pecans
    1/2 cup semisweet chocolate chips

    Recipe

    Preheat oven to 350ºF. Lightly grease an 8x8 inch pan. To make crust: Place chocolate in double boiler over medium high heat and cook until chocolate has almost melted. Off heat, stir until smooth. Set aside and cool to room temperature, but do not let it harden. Place the flour, sugar and salt in a food processor, and process until well combined. Add the butter, little by little, and process until it has the consistency of coarse cornmeal or is pebbly. Add the cooled chocolate and mix until thoroughly combined. Press into the prepared pan and put in oven. Bake until just golden, about 12-15 minutes. Set aside.

    To make filling: Place the milk, coconut, and nuts in a bowl, mixing to combine. Spread over the crust and put in oven; bake until lightly golden, about 20-25 minutes. Immediately sprinkle the chocolate chips over the filing, top with a tent of aluminum foil, and set aside for 5 minutes. Remove the foil tent and spread the melted chips evenly. Cool in the pan and cut into 16 bars.
