    Coconut: Coconut Granola Bars

    2 1/4 cups Quick-cooking oats -- uncooked
    1 cup Flaked coconut
    1/4 cup Wheat germ
    1/4 cup Plus 2 tb butter or margarine
    1/4 cup Brown sugar -- firmly packed
    1/2 cup Honey
    1/2 cup Peanut butter
    1 1/2 ts Vanilla extract
    1/2 cup Unsalted peanuts -- chopped
    1/2 cup Raisins

    Recipe

    Combine oats, coconut, and wheat germ in a greased 9-inch square pan. Bake at 325ºF for 25 minutes, stirring occasionally. Set aside. Combine butter, sugar, and honey in a medium saucepan; cook over medium heat, stirring occasionally, until butter melts and sugar dissolves. Remove from heat, and add peanut butter and vanilla, stirring until peanut butter melts. Pour over oat mixture. Add peanuts and raisins, and stir well. (Mixture will seem dry at first; continue stirring until moist.) Press mixture firmly into pan with greased fingertips. Bake at 350ºF for 12 minutes. Cool on a wire rack. Cut into bars. Yield: 2 dozen.
