    Lemon: Healthy Lemon Bars

    List of Ingredients

    2 cups flour
    1/2 cup butter or margarine
    1/4 cup brown sugar
    3 eggs -- well beaten
    2 cups brown sugar
    1/2 teaspoon salt
    1 cup coconut -- finely shredded
    1/2 cup raisins
    1 cup walnuts -- optional
    2 tablespoons lemon juice
    1 teaspoon grated lemon rind

    Recipe

    Heat oven to 350ºF. Mix flour, butter and 1/4 cup sugar thoroughly. Press firmly into bottom of lightly greased oblong pan 13x 9 1/2 x 2. Bake 10 minutes. Mix eggs, 2 cups sugar and salt together. Stir in rest of ingredients, spread over the partially baked bottom layer. Bake about 25 minutes. Top will be lightly brown.
