    Almond: Honey Almond Bars

    List of Ingredients

    1 1/2 cups honey
    3/4 cup oil
    1/4 cup sugar
    6 cups sifted flour
    1 tablespoon baking powder
    1/2 teaspoon cinnamon
    1/2 teaspoon ground allspice
    1/4 teaspoon ground cloves
    1/4 teaspoon freshly grated nutmeg
    1/4 teaspoon salt
    2 cups finely ground blanched almonds
    1/2 cup finely chopped candied citron
    1/2 cup finely chopped candied orange peel
    3 extra large eggs, lightly beaten

    Recipe

    For the bars, combine the honey, oil and sugar in a large heavy saucepan over moderate heat. Cook, uncovered, for 10-15 minutes, stirring occasionally, until mixture froths up and sugar dissolves. Remove from heat an cool for 30 minutes. Preheat oven to 350ºF. Butter a 15x10 inch jelly roll pan and set aside. Mix the flour, baking powder, cinnamon, allspice, cloves, nutmeg, salt, almonds, citron and orange peel in large bowl and make a well in the center.

    Scrape the cooled honey mixture into the well in the dry ingredients. Add the eggs and stir in the mixture. Slowly incorporate the dry ingredients; dough will be quite stiff. Spread into prepared pan, smoothing well into the corners and leveling the surface. Bake the bars for 35 to 40 minutes, until a wooden toothpick inserted in center comes out clean. Cool bars on wire rack to room temp before cutting. Wrap airtight in plastic wrap to prevent from drying. Makes 2 dozen.
