Apple: Apple Pie Cake & Cream Cheese Frosting

1/4 cup butter, softened
1 cup sugar
1 egg
1/4 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1 cup flour
1 teaspoon baking soda
1/2 cup nuts, chopped
2 1/2 cups apples, diced
1 teaspoon vanilla
2 tablespoons hot water
3 ounces cream cheese, softened
3 tablespoons unsalted butter, softened
1/2 teaspoon vanilla
1 1/2 cups powdered sugar, sifted


Recipe

Heat oven to 350ºF. Grease a 9-inch pie pan. Combine first 12 ingredients in the order given. Batter will be thick. Pour into pie pan and bake for 45 minutes. Serve with cream cheese frosting. For Frosting: Mix cream cheese, butter, vanilla and powdered sugar Beat until smooth.
