    Apple: Applesauce Walnut Cake

    1 18 1/2 ounce yellow cake mix
    1/2 cup butter or margarine softened
    1 1/3 cups applesauce
    3 eggs
    1/2 teaspoon cardamom
    1 1/2 cups chopped walnuts
    Mocha Frosting (below)

    Recipe

    Preheat oven to 375°F.  Spray 2 9-inch cake pans with non-stick vegetable spray. In a large mixing bowl, combine cake mix, butter, applesauce, eggs, and cardamom; beat until well blended and smooth.  Stir in walnuts.  Spread batter evenly in prepared cake pans. Bake 30 to 35 minutes or until a tester inserted in the centers of the cakes comes out clean.  Cool in pans for 10 minutes.  Remove from pans; cool on a wire rack.

    MOCHA FROSTING
    1 tablespoon instant coffee powder
    6 ounces semisweet chocolate morsels
    1/4 cup water
    1 cup butter or margarine, softened
    3 egg yolks
    2 cups confectioners’ sugar
    Walnut halves

    In a small saucepan, combine coffee powder, chocolate morsels, and water.  Cook over low heat, stirring constantly, until chocolate is melted and mixture is smooth.  Set aside to cool.
    In a medium bowl, cream butter until light and fluffy.  Add egg yolks, one at a time, beating well after each addition.  Beat in chocolate mixture and confectioners’ sugar.  Refrigerate until thick enough to spread.  Fill and frost the cake.  Decorate with walnut halves.
