    Banana: Banana Ginger Cake

    List of Ingredients

    3/4 cup sugar
    1/4 cup butter or margarine softened
    1 1/2 cups mashed bananas
    1 teaspoon vanilla extract
    1 egg
    1 1/2 cups self-rising flour
    2 teaspoons ground ginger
    2 tablespoons milk
    Topping (below)

    Recipe

    Preheat oven to 350°F.  Spray a 9x9-inch baking pan with non-stick vegetable spray. In a large mixing bowl, cream sugar and butter until light and fluffy.  Add bananas, vanilla, and egg; beat until well blended.  Add flour and ginger; mix until moistened. Add milk; mix thoroughly.  Pour into prepared baking pan. Bake 25 to 35 minutes or until a tester inserted in the center comes out clean.  Cool in pan on a wire rack.  Cut into squares; top with a dollop of Topping.

    TOPPING
    1/3 cup non-dairy whipped topping
    1/8 teaspoon ground ginger
    1/8 teaspoon ground nutmeg
    In a small bowl, combine all ingredients; gently stir until blended.
