    Chocolate: Black Chocolate Cake

    3/4 cup unsweetened cocoa powder
    1 cup boiling water or prepared coffee
    2 3/4 cups flour
    2 teaspoons baking soda
    1/2 teaspoon baking powder
    1/2 teaspoon kosher salt
    1 cup unsalted butter, room temperature
    1 3/4 cups dark brown sugar
    1 tablespoon vanilla
    5 eggs, room temperature
    1 egg white, room temperature

    Recipe

    Preheat oven to 325ºF. LIghtly grease and flour two or three 9" cake pans. Place the cocoa and water in a small mixing bowl and mix until it forms a paste; set aside to cool. Place the flour, baking soda, baking powder, and salt in a mixing bowl and mix to combine. Place the butter and brown sugar in the bowl of a mixer fitted with a paddle and beat until light and fluffy.

    Add the cocoa paste, vanilla, eggs, and egg white, one at a time, beating well and scraping down the sides of the bowl before each addition. Add the flour mixture and mix until just combined. Scrape down the sides of the bowl, spoon into prepared pans, and bake for 30-35 minutes, or until a tester comes out clean. Cool the cakes in the pans for 5 minutes and then invert onto a rack. While the cake is cooling, make chocolate ganache frosting; frost the cake when it is completely cooled.
