    Blueberry: Blueberry Crumb Cake

    1/4 cup butter or margarine softened
    3/4 cup sugar
    1 egg lightly beaten
    1/2 cup milk
    2 cups self-rising flour
    2 cups blueberries

    Recipe



    Preheat oven to 375°F.  Spray a 9x9-inch baking pan with non-stick vegetable spray.

    In a large mixing bowl, cream butter and sugar until light and fluffy.  Add egg and milk; beat until smooth.  Stir in flour until blended.  Fold in blueberries.  Spread in prepared baking pan.  Sprinkle Crumb Topping over the batter.

    Bake 40 to 45 minutes or until a tester inserted in the center comes out clean.  Cool in pan on a wire rack.

    CRUMB TOPPING
    1/2 cup sugar
    1/4 cup self-rising flour
    1/2 teaspoon ground cinnamon
    1/4 cup butter or margarine
    In a small bowl, combine all ingredients; mix until crumbly.
