    Blueberry: Blueberry Cake

    List of Ingredients

    CAKE:
    2 1/2 cups flour
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1 cup butter, softened
    1 1/4 cups sugar
    1 teaspoon vanilla
    1/2 teaspoon grated lemon rind
    2 eggs
    1 cup sour cream

    FILLING:
    2 tablespoons sugar
    1 cup blueberries

    TOPPING:
    1 tablespoon sugar
    1/2 teaspoon cinnamon

    Recipe

    Combine flour, baking powder and baking soda; set aside. Cream butter, 1 1/4 c. sugar, vanilla and lemon rind. Beat in eggs, one at a time. Add sour cream and mix well. Gradually beat in dry ingredients. To prepare filling, mix sugar and blueberries. Turn about 1/3 of cake batter into greased bundt pan. Sprinkle with 1/2 of the blueberry filling. repeat layers. Spread with remaining batter. Mix sugar and cinnamon for topping. Sprinkle over top of batter and press into batter. Bake at 350ºF for 50 minutes.
