    Apple: Bourbon Applesauce Cake

    List of Ingredients

    1/2 cup butter or margarine softened
    2 eggs
    1 cup firmly packed brown sugar
    2 1/2 cups self-rising flour
    1/4 cup wheat germ
    2 cups applesauce
    1/4 cup bourbon
    3/4 cup finely chopped walnuts
    Confectioners' sugar

    Recipe

    Preheat oven to 325°F.  Spray a 9x5-inch loaf pan with non-stick vegetable spray. In a large mixing bowl, combine butter, eggs, brown sugar, flour, wheat germ, applesauce, and bourbon; beat until well blended.  Stir in walnuts.  Pour into prepared loaf pan. Bake for 1 hour and 30 minutes or until cake springs back when light touched.  Cool in pan for 10 minutes.  Remove from pan; cool completely on a wire rack.  Dust with confectioners' sugar.
