    Cherry: Cherry Lover's Cake

    1 18 1/2 ounce cherry cake mix
    1 cup water
    1/4 cup maraschino cherry juice
    1/3 cup vegetable oil
    3 eggs
    1/2 cup chopped almonds
    Cherry Frosting (below)
    Maraschino cherry halves

    Recipe



    Preheat oven to 350°F.  Spray a 10-inch tube pan with non-stick vegetable spray.

    In a large mixing bowl, combine cake mix, water, cherry juice, oil, and eggs; beat until well blended.  Fold in almonds.  Pour into prepared tube pan.

    Bake 45 to 50 minutes or until a tester inserted in the center comes out clean.  Cool in pan for 10 minutes.  Remove from pan; cool completely on a wire rack.


    CHERRY FROSTING
    1/2 cup butter or margarine, softened
    3-1/2 cups confectioners’ sugar
    2 egg yolks
    2 tablespoons maraschino cherry juice
    Red food coloring

    In a small bowl, cream butter; beat in confectioners’ sugar.  Beat in egg yolks, cherry juice, and a few drops of red food coloring to make a delicate pink color and a smooth spreading consistency.  Spread over the top and sides of the cake.  Decorate with cherry halves.
