    Chocolate: Easy Chocolate Birthday Cake

    CAKE:
    2 cups flour
    2 1/2 teaspoons baking powder
    1/4 teaspoon salt
    1/2 cup unsalted butter, room temperature
    1/4 cup oil
    1 1/2 cups sugar
    5 ounces unsweetened chocolate, melt, cool
    2 1/2 teaspoons vanilla
    3 large eggs, room temperature
    1 1/3 cups milk, room temperature

    FLUFFY CHOCOLATE FROSTING:
    1/2 cup unsalted butter, room temperature
    2 ounces unsweetened chocolate, melted, cooled
    3 cups powdered sugar
    1 teaspoon vanilla
    1 tbl milk (1 to 4)

    Recipe

    To prepare cake: Preheat oven to 350ºF. LIghtly butter bottoms and sides of two 9" round cake pans. Line bottoms of pans with circles of baking parchment or wax peper. Dust sides of pan with flour and tap out excess. In medium bowl, stir together flour, baking powder and salt.

    In a large bowl, using a hand-held electric mixer on medium high speed, beat together butter, oil, and sugar until combined. Beat in chocolate and vanilla. One at a time, add eggs, beating well after each addition. IN three additions each, beat in flour mixture and milk, beating just until combined. Divide batter between prepared pans and spread evenly. Bake for 25-30 minutes, or until tester comes out clean. Remove pans to wire racks. Cool for 10 minutes. Carefully invert cake layers onto racks and cool completely.

    To prepare frosting: In a large bowl, using a hand-held electric mixer on medium-high speed, beat butter until creamy. Beat in chocolate. With mixer on low speed, gradually sift sugar into bowla nd combine. Beat in vanilla. Beat in just enough milk to make frosting spreadable. To assemble cake, place one cake layer on serving plate and spread with layer of frosting. Top with second layer, and frost top and side of cake. Cover cake and store in fridge. Allow cake to come to room temperature before serving.
