    2 eggs lightly beaten
    1 cup firmly packed brown sugar
    1 cup sugar
    2 teaspoons ground cinnamon
    1/2 cup vegetable oil
    2 1/4 cups self-rising flour
    4 cups chopped apples
    1 cup chopped walnuts
    Confectioners’ sugar icing

    Preheat oven to 350°F.  Spray 13x9-inch baking pan with non-stick vegetable spray. In a large mixing bowl, combine eggs, sugars, cinnamon, oil, and flour; beat until thoroughly blended.  Stir in apples.  Pour into prepared baking pan.  Sprinkle walnuts over the top of the batter. Bake for 30 minutes or until tester inserted in the center comes out clean.  Cool in pan on a wire rack.  Drizzle with confectioners’ sugar icing.
