    Spice: Caramel Spice Cake & Caramel Icing

    List of Ingredients

    2 cups flour
    1 1/3 cups sugar
    3 1/2 teaspoons baking powder
    1 teaspoon salt
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1/4 teaspoon ground cloves
    1/2 cup shortening
    1 cup milk
    1 teaspoon vanilla
    2 large eggs, unbeaten

    CARAMEL ICING: (double for layer cake)
    1 1/2 cups brown sugar
    1/4 cup light cream
    2 tablespoons butter
    1 teaspoon vanilla

    Recipe

    Sift together dry ingredients. Add shortening, milk, and vanilla. Beat vigorously with spoon for two minutes (about 150 strokes per minute), or mix with electric mixer on medium speed for 2 minutes, scraping sides of bowl constantly. Add eggs, continue beating 2 more minutes, scraping bowl constantly. Pour batter into prepared pan(s). Bake at 350ºF 40 to 45 minutes for oblong, or 35 to 40 minutes for layers. Frost when cool.

    EASY CARAMEL ICING: Mix ingredients together in saucepan. Bring to boil and boil for 3 minutes, stirring constantly. Remove from heat. Add 1 t vanilla. Cool to lukewarm. Beat until creamy and thick enough to spread. Add a little cream, if necessary, to make easier to spread. Makes enough to cover top of oblong cake.
