    Roll: Pumpkin Cream Cheese Roll

    List of Ingredients

    3 eggs, beaten
    1 cup sugar
    2/3 cup pumpkin
    1/2 teaspoon cinnamon
    1 teaspoon salt
    1 teaspoon baking powder
    1 cup chopped nuts
    3/4 cup flour

    FILLING:
    8 ounces cream cheese, softened
    2 teaspoons butter, melted
    1 teaspoon vanilla
    1 cup powdered sugar

    Recipe

    Mix all ingredients together. Grease a cookie sheet, line with wax paper, grease again. Spread on dough. Sprinkle on chopped nuts. Bake at 375ºF for 15 minutes. Turn out on a towel sprinkled generously with powdered sugar. Remove wax paper. Roll up cake in towel to cool. When cool, spread on filling (simply combine filling ingredients together) and re-roll. Store in refrigerator. This can be frozen.
